The future of food is regenerative.

How We Eat is an exploration into the future of Regenerative Food through an interactive food experience.

 

We bring great people together, we eat fantastic food and we talk about the food system, with its flaws and its possibilities.

Imagine sitting in the chef’s kitchen while they prepare a diverse menu of dishes and ingredients rich in stories. These edible stories are the starting point the How We Eat experience which is designed for guests to engage in conversations around different parts of a regenerative food system.

The courses are aimed to encourage group reflections on the food system we experience currently, and the food system we are envisioning and hoping to transition towards.

Expect to discuss topics like why sustainability isn’t enough, biodiversity, living systems and place based food as we travel through a 5 course menu.

We hosted our inaugural event in November 2021 alongside chef Steven Vick preparing a 5 course tasting menu, with a concept a little out of the ordinary - each course featured a core ingredient that represents a part of the journey from a degenerative food system, to a regenerative one, aiding us in exploring some of the features of our food systems through our taste buds. Sommelier Josh Fine complemented the food with a wine pairing, so naturally, we had a wonderful selection of Natural Wines lined up.
